6 Large Onions-Sliced thinly
2 Cloves Garlic-Minced
2 teaspoons Fresh Thyme
1 tablespoon Extra-Virgin Olive Oil
3 tablespoons Butter
6 cups Beef stock
2 Bay leaf
1/2 cup dry Sherry
Salt and freshly ground black pepper
4 thick slices French bread-Toasted
4-8 slices of Gruyere or Provolone cheese

Let’s start with our Homemade French Onion Soup for a Rainy Day! Place a large saucepan over medium heat add in the butter and oil. Add in the sliced onions, minced garlic, thyme, salt and pepper. Cook onions 15 to 20 minutes until tender and caramelized. Stir Frequently.
Add in the bay leaf and dry sherry this will help deglaze the fond, these are the tasty onion and garlic bits on the bottom of the saucepan and stir. Add in your beef stock and bring to a boil. Once the mixture boils reduce the heat and let simmer for 10 minutes, covered.

Chef Huda’s Tip: This soup is best served in an individual crock pot, but you can serve it in any bowl of choice. To create your cheesy goodness, simply slice and toast your french bread and top with Gruyere or Provolone cheese. Place in the oven until the cheese melts and is bubbly and delicious.
